Gingerbread Loaf

Ingredients:
1 and 3/4 cups all-purpose flour (option for gluten-free)
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp allspice
1/4 tsp salt
1/2 cup unsalted butter, room temperature
1/2 cup dark brown sugar
1/2 cup milk, room temperature
1/4 cup molasses
1 large egg, room temperature
2 tsp vanilla extract
1/4 cup sour cream, room temperature
Instructions (yields 10-12 slices):
Preheat oven to 350°F. Line a loaf pan with parchment paper and set aside.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, allspice, and salt. Set aside.
In a separate bowl, whisk together the milk, molasses, egg, and vanilla extract. Set aside.
Using a stand mixer, cream together the butter and brown sugar until light and fluffy. With the mixer on low, alternately add the flour mixture and the molasses mixture. Mix just until combined. Add the sour cream and mix just until combined.
Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving.
Non-Alcoholic Option
