Lemon Poppy Seed Baked Donuts

Ingredients:
1 and 1/3 cups all-purpose flour (option for gluten-free)
1/2 cup granulated sugar
1 tsp baking powder
1/4 tsp salt
2 tbsp lemon zest (~1 lemon)
2 tbsp lemon juice (~1/2 lemon)
1 large egg
1/2 cup plant-based milk with 1 tsp vinegar
1/2 tsp vanilla extract
1 tbsp olive oil
1 tbsp poppy seeds
Instructions (yields 12 donuts):
Preheat oven to 350°F.
Mix all the dry ingredients in a bowl (flour, sugar, baking powder, salt, lemon zest, and poppy seeds).
Mix all the wet ingredients in a separate bowl (lemon juice, egg, milk, vanilla extract, and olive oil).
Pour the wet ingredients into the bowl of dry ingredients and mix until well combined.
Pour batter into a donut tin and bake donuts at 350°F for 12-15 minutes.
Allow to cool before digging in!
