Lemon Poppy Seed Baked Donuts

Ingredients:

  • 1 and 1/3 cups all-purpose flour (option for gluten-free)

  • 1/2 cup granulated sugar

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 tbsp lemon zest (~1 lemon)

  • 2 tbsp lemon juice (~1/2 lemon)

  • 1 large egg

  • 1/2 cup plant-based milk with 1 tsp vinegar

  • 1/2 tsp vanilla extract

  • 1 tbsp olive oil

  • 1 tbsp poppy seeds

Instructions (yields 12 donuts):

  • Preheat oven to 350°F.

  • Mix all the dry ingredients in a bowl (flour, sugar, baking powder, salt, lemon zest, and poppy seeds).

  • Mix all the wet ingredients in a separate bowl (lemon juice, egg, milk, vanilla extract, and olive oil).

  • Pour the wet ingredients into the bowl of dry ingredients and mix until well combined.

  • Pour batter into a donut tin and bake donuts at 350°F for 12-15 minutes.

  • Allow to cool before digging in!
