No-Bake Superfood Bars
Prep Time: 10 minutes | Freeze Time: 30 minutes | Total Time: 40 minutes
Ingredients:
For the bars:
1 cup pitted Medjool dates
1/2 cup shelled pistachios
1/4 cup raw pecan halves
1/4 cup raw walnuts
1 tbsp chia seeds (sub flaxseeds)
3 tbsp cacao powder
1/4 cup unsweetened shredded coconut
1 tbsp coconut oil, melted
1 and 1/2 tsp vanilla extract
1/4 tsp sea salt
1/4 cup dried cherries
2 tbsp warm water
3 oz dark chocolate
For the garnish:
1 tbsp shelled pistachios, chopped
1 tbsp pecans, chopped
1 tbsp dried cherries
Flakey sea salt (optional)
Instructions (yields 8 bars):
Mix the dates, half of the pistachios, pecan halves, and walnuts together in a food processor until chunky.
Add in the chia seeds, cocoa powder, shredded coconut, coconut oil, vanilla extract, and salt to the food processor—process until chunky.
Add the last half of the pistachios, dried cherries, and water to the mixture and pulse.
Add mixture into a loaf or square pan lined with parchment paper, pressing evenly towards the sides of the pan. Set aside.
Melt the dark chocolate using the double boiler method, stirring until smooth.
Pour the chocolate over the bars, tilting the pan so that the chocolate is evenly spread. Top the bars with chopped pistachios, chopped pecans, and dried cherries. Place the bars in the freezer for 30+ minutes to harden.
Remove from the freezer, slice, and enjoy! (Option to top with flakey sea salt for taste)
