Small Batch Dark Chocolate Raspberry Cookies


Prep Time: 8 minutes | Cook Time: 10 minutes | Total Time: 18 minutes

Ingredients:

  • 1/4 cup unsalted butter, melted

  • 1/3 cup brown sugar (light or dark)

  • 2 tbsp granulated sugar

  • 1 large egg yolk

  • 1 and 1/2 tsp vanilla extract

  • 3/4 cup + 1 tbsp all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup dark chocolate chips

  • 1/4 cup raspberries, fresh or frozen

  • Flaky sea salt, for sprinkling

Instructions (yields 15 cookies):

  • Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.

  • Whisk the melted butter, brown sugar, and granulated sugar together in a bowl until well combined. Add the egg yolk and vanilla extract, then whisk again.

  • Add the flour, baking soda, and salt and mix using a spatula. Fold in the chocolate chips and raspberries.

  • Using a 1-2 tbsp cookie scoop, scoop balls of dough and place them on the prepared baking sheet.

  • Bake for about 10 minutes or until edges are set. Remove the cookies from the oven, sprinkle them with flaky sea salt, and set them aside to cool.
