4th of July Angel Food Cake

Prep Time: 20 minutes | Cook Time: 40 minutes | Total Time: 1 hour

Ingredients:

  • 1 cup all-purpose flour (I used gluten-free)

  • 1/4 cup cornstarch

  • 1/2 tsp salt

  • 12 egg whites, room temperature

  • 1 and 1/2 tsp cream of tartar

  • 1 and 1/2 cups granulated sugar, divided

  • 2 tsp vanilla extract

  • 1/3 cup blackberries

  • 1/3 cup blueberries

  • 1/3 cup raspberries

  • Dairy-free whipped cream, for topping

Instructions:

  • Preheat oven to 350°F. Line two cake pans with parchment paper and grease. Set aside.

  • Sift the flour, cornstarch, half of the sugar, and salt into a bowl. Repeat 3 times.

  • Beat the egg whites in a large bowl on low until frothy, then add the vanilla extract and cream of tartar. Increase to medium, adding the remaining sugar about 1 tablespoon at a time. Increase to high and beat until stiff, glossy peaks form. Sift about 1/4 cup flour mixture on top and fold gently to incorporate. Repeat until all the flour is used.

  • Spoon into the pre-lined pans, smooth the tops, then run a knife through the batter to break any air bubbles. Bake until a skewer inserted halfway between the edge and center comes out clean, about 35 to 40 minutes.

  • Cool completely before serving with whipped cream and berries.
