Chocolate Chip Skillet Cookie for Two

Prep Time: 10 minutes | Cook Time: 22 minutes | Total Time: 32 minutes

Ingredients:

  • 1/4 cup unsalted butter

  • 3 tbsp light or dark brown sugar

  • 2 tbsp granulated sugar

  • 1 large egg yolk, room temperature

  • 1 tsp vanilla extract

  • 1/2 cup + 1 tbsp all-purpose flour

  • 1/4 tsp baking soda

  • 1/8 tsp salt

  • 1 oz semisweet or dark chocolate, roughly chopped

  • Flaky sea salt, for sprinkling

  • Vanilla ice cream, for topping

Instructions:

  • Preheat oven to 350° F. Grease a 6-inch cast iron skillet and set aside.

  • Melt the butter in a small saucepan over low heat, stirring occasionally until light brown specks appear (there should be a nutty aroma).

  • Combine the browned butter, brown sugar, and granulated sugar in a bowl. Stir until smooth. Add the egg yolk and vanilla and mix until combined.

  • Add the flour, baking soda, and salt. Stir until no streaks of flour remain.

  • Fold in the chocolate chunks. Be careful not to over-mix.

  • Spread batter evenly in the prepared cast iron skillet. Sprinkle the top with a little sea salt. Bake for 20-22 minutes or until golden brown. Don't overbake as you want the cookie to be slightly gooey.

  • Remove from oven and let cool on a wire cooling rack for 10-15 minutes.

  • Serve with ice cream, if desired, and indulge!
