Flourless Chickpea Chocolate Chip Blondies
The classic chocolate chip blondie reimagined… These flourless chickpea chocolate chip blondies are higher in fiber and protein so you don’t experience that terrible energy crash soon after enjoying your sweet treat! Read on for the recipe!
Prep Time: 5 minutes | Cook Time: 25 minutes | Total Time: 30 minutes
Ingredients:
1 can (15 oz) chickpeas, rinsed and drained
1/2 cup almond butter
1/3 cup maple syrup
1 and 1/2 tsp vanilla extract
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup dark chocolate chips
Coarse sea salt, for sprinkling
Instructions (yields 16 blondies):
Preheat the oven to 350° F and grease a square pan. Set aside.
In a food processor, add the chickpeas, almond butter, maple syrup, vanilla, salt, baking soda, and baking powder. Process until the batter is smooth.
Fold in the dark chocolate chips.
Pour the batter into the prepared pan and bake for 22-25 minutes. The batter will look underdone, but you don’t want the blondies to dry out.
Remove from the oven and allow the blondies to cool completely before slicing.
Enjoy with ice cream or by itself!
