Almond Flour Brownies with Chocolate Drizzle

Ingredients:

  • For the brownies:

    1 and 1/4 cups almond flour

    1/3 cup Dutch cocoa powder

    1/4 tsp salt

    1/2 tsp baking powder

    1/2 cup coconut oil

    2/3 cup coconut sugar (sub granulated sugar)

    2 large eggs, room temperature

    3 tbsp water

    1/2 cup dark chocolate chips

  • For the topping:

    1/2 cup almonds

    1/3 cup dark chocolate chips

    2-3 tbsp almond milk

Instructions (yields 16 brownies):

  • Preheat the oven to 375°F. Line and grease an 8x8 inch pan with parchment paper and set aside.

  • In a bowl, mix the almond flour, cocoa powder, arrowroot, salt, and baking powder.

  • In a separate bowl, whisk the oil and sugar together until well combined. Add the eggs and water, then whisk again until well combined.

  • Fold in the dry ingredients until just combined.

  • Fold in the chocolate chips until just combined.

  • Pour the batter into the pan lined with parchment paper and bake in the oven for 22-25 minutes, or until a toothpick comes out clean.

  • Remove from the oven and allow to cool. Cut into 16 squares and enjoy!
