No-Churn Vegan S’mores Ice Cream
Prep Time: 5 minutes | Freeze Time: 2 hours | Total Time: 2 hours 5 minutes
Ingredients:
2 (14 oz) cans full-fat coconut cream, chilled overnight (can be taken from 2 cans of coconut cream or coconut milk)
1 (11.25 oz) can sweetened condensed coconut milk
2 tsp vanilla extract
1/2 tsp salt
Mix-ins: dark chocolate, graham crackers, and marshmallows
Instructions:
Line a 9x5 inch loaf pan with parchment paper and set aside.
In a glass bowl, using a hand mixer, whip the coconut cream on high speed for about 3 minutes.
Add the sweetened condensed coconut milk, vanilla, and salt, then whip again.
Gently fold in your mix-ins using a rubber or silicone spatula.
Pour the mixture into a lined loaf pan and place in the freezer for at least 2 hours.
