No-Churn Vegan S’mores Ice Cream


Prep Time: 5 minutes | Freeze Time: 2 hours | Total Time: 2 hours 5 minutes

Ingredients:

  • 2 (14 oz) cans full-fat coconut cream, chilled overnight (can be taken from 2 cans of coconut cream or coconut milk)

  • 1 (11.25 oz) can sweetened condensed coconut milk

  • 2 tsp vanilla extract

  • 1/2 tsp salt

  • Mix-ins: dark chocolate, graham crackers, and marshmallows

Instructions:

  • Line a 9x5 inch loaf pan with parchment paper and set aside.

  • In a glass bowl, using a hand mixer, whip the coconut cream on high speed for about 3 minutes.

  • Add the sweetened condensed coconut milk, vanilla, and salt, then whip again.

  • Gently fold in your mix-ins using a rubber or silicone spatula.

  • Pour the mixture into a lined loaf pan and place in the freezer for at least 2 hours.
