Nutella Swirled Banana Muffins

Ingredients:
2 large ripe bananas, mashed
1/4 cup unsalted butter, melted
2 large eggs, room temperature
1/2 cup (120g) nonfat Greek yogurt
1 and 1/2 tsp vanilla extract
1 and 1/3 cups (160g) all-purpose flour
1/2 cup light brown sugar
2/3 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1/4 cup (70g) Nutella
Instructions (yields 8 muffins):
Preheat oven to 425°F. Line a muffin tin with 8 muffin liners and set aside.
In a large bowl, combine the mashed bananas with the melted butter; stir well to combine. Mix in the eggs, Greek yogurt, and vanilla extract. Set aside.
Mix the flour, sugar, baking soda, cinnamon, and salt in a separate bowl. Fold the dry ingredients into the wet ingredients until no streaks of flour remain. Be careful not to overmix!
Pour the batter evenly into the prepared muffin tin. Melt the Nutella in the microwave for 15 seconds. Drizzle the Nutella over the muffins, then gently swirl the batter with a knife or chopstick to form swirls.
Bake for 5 minutes at 425°F, then turn the oven down to 375°F and bake for an additional 15 minutes (the muffins should be golden brown and spring back to the touch).
Remove from the oven and allow to cool before serving!
