Nutella Swirled Banana Muffins


Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes

Ingredients:

  • 2 large ripe bananas, mashed

  • 1/4 cup unsalted butter, melted

  • 2 large eggs, room temperature

  • 1/2 cup (120g) nonfat Greek yogurt

  • 1 and 1/2 tsp vanilla extract

  • 1 and 1/3 cups (160g) all-purpose flour

  • 1/2 cup light brown sugar

  • 2/3 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/2 tsp salt

  • 1/4 cup (70g) Nutella

Instructions (yields 8 muffins):

  • Preheat oven to 425°F. Line a muffin tin with 8 muffin liners and set aside.

  • In a large bowl, combine the mashed bananas with the melted butter; stir well to combine. Mix in the eggs, Greek yogurt, and vanilla extract. Set aside.

  • Mix the flour, sugar, baking soda, cinnamon, and salt in a separate bowl. Fold the dry ingredients into the wet ingredients until no streaks of flour remain. Be careful not to overmix!

  • Pour the batter evenly into the prepared muffin tin. Melt the Nutella in the microwave for 15 seconds. Drizzle the Nutella over the muffins, then gently swirl the batter with a knife or chopstick to form swirls.

  • Bake for 5 minutes at 425°F, then turn the oven down to 375°F and bake for an additional 15 minutes (the muffins should be golden brown and spring back to the touch).

  • Remove from the oven and allow to cool before serving!
