Peanut Butter & Jelly Swirled Blondies

These Peanut Butter and Jelly Swirled Blondies transform a beloved classic into a rich, buttery dessert bar. Use the brands you loved as a kid (Jif Peanut Butter and Smucker’s Red Raspberry for me) to bring back memories of childhood lunchtime!


Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes

Ingredients:

  • 1/2 cup unsalted butter, melted

  • 1/2 cup light brown sugar

  • 1 large egg, room temperature

  • 1 large egg yolk, room temperature

  • 1 tbsp vanilla extract

  • 1 cup all-purpose flour

  • 1/4 tsp baking powder

  • 1/2 tsp salt

  • 1/4 cup creamy peanut butter

  • 1/4 cup jam or fruit preserves of choice

Instructions (yields 9 squares or 18 triangles):

  • Preheat the oven to 350°F. Line a square pan with parchment paper and set aside.

  • In a large bowl, whisk the butter and brown sugar together until well combined. Whisk in the egg, egg yolk, and vanilla.

  • Add the flour, baking powder, and salt. Using a spatula, gently fold the dry ingredients in with the wet until no streaks of flour remain.

  • Transfer the batter to the prepared pan and use the spatula to evenly spread it to the edges. Drop spoonfuls of the peanut butter and jam on top of the batter. Use a butter knife or a chopstick to drag and swirl the peanut butter and jam.

  • Bake until the edges are set, and the blondies are golden brown (~30-40 minutes). Allow to cool before slicing and serving!
