Brown Butter Pecan Pie Bars

Ingredients:

  • For the crust:

    1/2 cup unsalted butter

    1/4 cup granulated sugar

    1 tsp vanilla extract

    1/2 tsp salt

    1 and 1/4 cups all-purpose flour

  • For the filling:

    1/2 cup unsalted butter

    3 tbsp light brown sugar

    3 tbsp dark brown sugar

    1/2 cup pure maple syrup

    2 tbsp heavy cream (sub half and half)

    1 tsp vanilla extract

    2 large eggs, beaten

    1 and 1/2 cups pecan halves, roughly chopped

Instructions (yields 16 bars):

  • Preheat oven to 350°F and line a square pan with parchment paper. Set aside.

  • Melt butter over medium heat in a small saucepan (I like using a light-colored saucepan) and stir occasionally. Once melted, the butter will begin to foam and once there are lightly browned specks at the bottom of the pan and there is a nutty aroma, remove the saucepan from the heat and allow to cool for 5 minutes.

  • In a bowl, stir together the browned butter, granulated sugar, vanilla extract, and salt. Using a fork, stir in the flour until combined. Press the crust evenly into the prepared baking pan and bake for 15 minutes.

  • Combine the butter, light brown sugar, dark brown sugar, maple syrup, heavy cream, and vanilla extract in another saucepan over medium heat. Whisk to combine the ingredients and dissolve the sugar. Bring to a boil and allow to boil for 3 minutes. Remove the saucepan from the heat and allow to cool for another 2-3 minutes. Carefully drizzle half of the mixture into a measuring cup with the beaten eggs and whisk rapidly (this keeps the eggs from scrambling). Once half of the mixture is added to the beaten eggs, slowly drizzle and whisk it back into the saucepan. Stir in the pecans, and pour evenly over the crust.

  • Bake for about 35 minutes or until a toothpick inserted in the center comes out mostly clean.

  • Allow to cool completely before slicing and serving.
