Apple Fritter Bread

Ingredients:
For the cinnamon apples:
2 medium apples, peeled and sliced into small cubes (I used Granny Smith)
1 tbsp dark brown sugar
1 tsp ground cinnamon
For the cinnamon sugar:
1/2 cup dark brown sugar
2 tsp ground cinnamon
For the bread:
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
1 and 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/3 cup milk
1/3 cup sour cream (sub Greek yogurt)
For the glaze (optional):
1/2 cup powdered sugar
1 tbsp milk
1/4 tsp vanilla extract
Pinch of salt
Instructions (yields 10-12 slices):
Preheat oven to 350°F. Line a loaf pan with parchment paper on all sides and set aside.
To make the cinnamon apples and cinnamon sugar: Combine the cubed apples, dark brown sugar, and ground cinnamon together in a bowl and toss to combine. Set aside.
To make the cinnamon sugar: Combine the brown sugar and cinnamon in a small bowl and stir. Set aside.
To make the bread: Beat the butter and granulated sugar in a stand mixer fitted with the paddle attachment until light and fluffy.
Use a silicone spatula to scrape down the sides of the bowl. Add the eggs one at a time and beat. Add the vanilla extract and mix well.
In a separate bowl, whisk together the flour, baking powder, and salt. With the mixer on low speed, add half of the dry ingredients and mix slightly. Next, add the milk and sour cream and mix slightly. Lastly, add the second half of the dry ingredients and mix until just combined and no streaks of flour remain.
Use a silicone spatula to transfer half of the batter into the prepared loaf pan and spread into an even layer. Top with half of the cinnamon apples and sprinkle with half of the cinnamon sugar. Spoon the remaining half of the batter over the apples, using a silicone spatula to spread into an even layer. Top with the remaining apples and cinnamon sugar.
Bake until golden brown all over and a butter knife inserted into the center of the loaf comes out clean (~45-55 minutes). Allow to cool.
Optional: While the loaf cools, make the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Once the loaf is cool, drizzle with the glaze and serve!
