Apple Cider Bundt Cake


Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour

Ingredients:

  • 2 and 1/2 cups all-purpose flour (option for gluten-free)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tbsp and 1 tsp ground cinnamon

  • 1 and 1/2 tsp apple pie spice

  • 1/2 tsp cloves

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, room temperature

  • 1 cup light brown sugar

  • 1/2 cup granulated sugar

  • 2 large eggs, room temperature

  • 1 cup unsweetened apple cider

  • 1/2 cup unsweetened applesauce

  • 2 tsp vanilla extract

Instructions:

  • Preheat oven to 350°F. Grease a bundt pan and set aside.

  • Whisk flour, baking powder, baking soda, spices, and salt together in a medium bowl. Set aside.

  • Beat butter and sugar together in a stand mixer until pale and fluffy. Add the eggs one at a time and beat until combined.

  • Mix apple cider, applesauce, and vanilla in a small bowl. With the stand mixer on its lowest speed, alternate adding in the dry ingredients and the wet ingredients (finish with the flour mixture) and mix until just combined.

  • Spoon batter into the prepared bundt pan and smooth with a spatula. Tap the pan sharply to reduce air bubbles.

  • Bake the cake for about 45 to 50 minutes, or until the cake is golden and springs back from the touch.
    Remove from the oven and allow to cool before slicing and serving.
