Mom’s Banana Bread
Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour
Ingredients:
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1/4 cup light brown sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking soda
1/4 cup walnuts, chopped
2-3 ripe bananas, mashed
Instructions (yields 10-12 slices):
Preheat oven to 350°F. Line a loaf pan with parchment paper and set aside.
Using a stand mixer, cream the butter until smooth. Add both of the sugars and cream until fluffy.
Add the eggs and vanilla extract. Beat well.
With the stand mixer on its lowest speed, slowly add the dry ingredients until just combined and no streaks of flour remain.
Remove the bowl from the stand mixer and mix in the bananas and waluts using a spatula.
Bake for 50 minutes or until toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving!
