Mom’s Banana Bread


Prep Time: 10 minutes | Cook Time: 50 minutes | Total Time: 1 hour

Ingredients:

  • 1/2 cup unsalted butter, room temperature

  • 1/2 cup granulated sugar

  • 1/4 cup light brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 cup walnuts, chopped

  • 2-3 ripe bananas, mashed

Instructions (yields 10-12 slices):

  • Preheat oven to 350°F. Line a loaf pan with parchment paper and set aside.

  • Using a stand mixer, cream the butter until smooth. Add both of the sugars and cream until fluffy.

  • Add the eggs and vanilla extract. Beat well.

  • With the stand mixer on its lowest speed, slowly add the dry ingredients until just combined and no streaks of flour remain.

  • Remove the bowl from the stand mixer and mix in the bananas and waluts using a spatula.

  • Bake for 50 minutes or until toothpick inserted into the center comes out clean.

  • Allow to cool before slicing and serving!

  • Make sure to use very ripe bananas
