Avocado Toast Two Ways

Ingredients:

  • 2 slices sourdough

  • 1 medium avocado

  • 1 large egg

  • 1/2 tbsp olive oil

  • 2 slices turkey bacon, cooked (sub chicken sausage)

  • A few cherry tomatoes, halved

  • 1 oz mozzarella

  • Salt and pepper, to taste

Instructions:

  • Toast two small slices of sourdough bread in a toaster.

  • Cut the avocado in half, slice it into thin pieces, and scoop it out with a spoon.

  • Remove the sourdough from the toaster and top one slice with cooked bacon and top both with the avocado slices.

  • Melt butter or heat olive oil in a skillet over medium heat. Crack the egg into the pan and cook until set (~2-3 minutes).

  • Remove the egg from the skillet and place onto the slice of avocado toast with the bacon. Top the second slice of toast with cherry tomatoes and mozzarella.

  • Enjoy!
