Tomato Basil Grilled Cheese
Prep Time: 18 minutes | Cook Time: 5 minutes | Total Time: 23 minutes
Ingredients:
1/2 tomato, thinly sliced
2 slices sourdough bread
1/2 cup sharp cheddar cheese, shredded
1/4 cup Havarti cheese, shredded
2 tbsp fresh basil, chopped
1/2 tbsp fresh thyme leaves
2 tbsp unsalted butter
1 tbsp parmesan cheese, grated
1 tbsp everything bagel seasoning
2 slices bacon, cooked
2 tbsp olive oil
Salt and pepper, for tasting
Instructions:
Arrange the tomatoes on a cutting board or paper towel and sprinkle them with salt and pepper. Let sit for 15 minutes to draw out excess moisture.
In a bowl, combine the cheddar, Havarti, basil, and thyme.
Butter the outside of both slices of bread. Sprinkle the parmesan and everything bagel spice over both buttered sides and press gently to adhere. On the inside of one of the slices of bread, evenly layer the cheese/herb mix, the tomatoes, and the bacon. Add the top piece of bread.
Heat olive oil in a skillet over medium heat. Place the sandwich in the skillet and cook until golden on each side. Enjoy with tomato soup!
