Brown Sugar Pop-Tart Cookies

Brown Sugar Cinnamon Pop-Tarts were the ultimate childhood treat (and undoubtedly the best pop-tart flavor with strawberry close behind). These Brown Sugar Pop-Tart Cookies capture all that nostalgia in every soft, addictive bite. They’re just as sweet and satisfying as the real thing—maybe even better!


Prep Time: 15 minutes | Cook Time: 20 minutes | Total Time: 35 minutes

Ingredients:

  • For the cookies:

    1/2 cup unsalted butter, room temperature

    1/2 cup granulated sugar

    1/2 cup light brown sugar

    1 and 1/2 tsp vanilla extract

    1 large egg, room temperature

    2 cups cake flour (sub all-purpose flour)

    2 tbsp cornstarch

    2 tsp baking powder

    1/2 tsp salt

  • For the brown sugar filling:

    2 tbsp light brown sugar

    1 tbsp butter

    1 tsp cinnamon

  • For the brown sugar icing:

    1 cup powdered sugar

    1/2 tsp vanilla extract

    1/4 tsp cinnamon

    2-3 tbsp milk

Instructions (yields 16 cookies):

  • Preheat oven to 350°F. Line two large baking sheets with parchment paper and set aside.

  • In a bowl, mix the flour, cornstarch, baking powder, and salt together. Set aside.

  • In the bowl of a stand mixer, cream the butter, granulated sugar, and brown sugar together until light and fluffy. Add the egg and vanilla extract, then beat until combined.

  • With the mixer on low speed, slowly add the dry ingredients to the bowl. Mix until no streaks of flour remain.

  • Using a 1–2 tablespoon cookie scoop, portion the dough and roll it into balls, placing them on the prepared baking sheets. Repeat with the remaining dough to form 24 cookie dough balls. Slice 8 of the cookies in half and set aside.

  • In a small bowl, combine the brown sugar filling ingredients and mix with a fork until well incorporated. Create a small well in the center of 16 dough balls and fill each with 1/2–1 teaspoon of the brown sugar mixture. Top each filled cookie with a reserved dough half, pressing gently to seal.

  • Bake for about 10 minutes, or until the edges are set. Remove from the oven and repeat with the remaining cookies.

  • While the cookies cool, prepare the icing. In a glass bowl, combine all icing ingredients and beat with an electric hand mixer until smooth. Once the cookies have cooled, spoon about 1 teaspoon of icing over each and spread into an even circle (you will have leftover icing).

  • Allow the cookies to set before enjoying.
