Small Batch Chocolate Chunk Pistachio Cookies


Prep Time: 8 minutes | Cook Time: 10 minutes | Total Time: 18 minutes

Instructions:

  • 3/4 cup all-purpose flour

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup unsalted butter, melted

  • 1/3 cup granulated sugar

  • 2 tbsp brown coconut sugar

  • 1 large egg yolk, room temperature

  • 2 tsp vanilla extract

  • 1/4 cup pistachios, ground

  • 1/4 cup dark chocolate chips or chunks, roughly chopped

  • 1 tbsp pistachios, crushed, for topping

  • Flaky sea salt, for sprinkling

Instructions (yields 12 cookies):

  • Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.

  • Whisk the melted butter with both sugars in a bowl until well combined. Whisk in the egg yolk and vanilla extract.

  • Add the ground pistachios, flour, baking powder, baking soda, and salt to the bowl with the wet ingredients and mix until no streaks of flour remain.

  • Fold in the dark chocolate chips.

  • Using a 1-2 tbsp cookie scoop, scoop the dough into balls and place them onto the prepared baking sheet. Top with crushed pistachios.

  • Bake for about 10 minutes or until the edges are set. Remove from the oven and top with flaky sea salt.

  • Allow to cool and enjoy!
