Small Batch Chocolate Chunk Pistachio Cookies

Instructions:
3/4 cup all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup unsalted butter, melted
1/3 cup granulated sugar
2 tbsp brown coconut sugar
1 large egg yolk, room temperature
2 tsp vanilla extract
1/4 cup pistachios, ground
1/4 cup dark chocolate chips or chunks, roughly chopped
1 tbsp pistachios, crushed, for topping
Flaky sea salt, for sprinkling
Instructions (yields 12 cookies):
Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.
Whisk the melted butter with both sugars in a bowl until well combined. Whisk in the egg yolk and vanilla extract.
Add the ground pistachios, flour, baking powder, baking soda, and salt to the bowl with the wet ingredients and mix until no streaks of flour remain.
Fold in the dark chocolate chips.
Using a 1-2 tbsp cookie scoop, scoop the dough into balls and place them onto the prepared baking sheet. Top with crushed pistachios.
Bake for about 10 minutes or until the edges are set. Remove from the oven and top with flaky sea salt.
Allow to cool and enjoy!
