Sun-Dried Tomato & Pesto Tostadas


Ingredients:

  • 2 tortillas (of choice)

  • 2 large eggs

  • 1/4 cup pesto

  • 2 tbsp sun-dried tomatoes

  • 2 tbsp feta, crumbled

  • Salt and pepper, to taste

Instructions:

  • Preheat oven to 350°F. Line a baking sheet with foil.

  • Place two tortillas on the prepared baking sheet and spread pesto, crack both eggs, and sprinkle feta and sun-dried tomatoes on top. Season both tortillas with salt and pepper.

  • Bake for 10-12 minutes.

  • Remove from the oven, allow to cool slightly, and enjoy!
