Sun-Dried Tomato & Pesto Tostadas
Ingredients:
2 tortillas (of choice)
2 large eggs
1/4 cup pesto
2 tbsp sun-dried tomatoes
2 tbsp feta, crumbled
Salt and pepper, to taste
Instructions:
Preheat oven to 350°F. Line a baking sheet with foil.
Place two tortillas on the prepared baking sheet and spread pesto, crack both eggs, and sprinkle feta and sun-dried tomatoes on top. Season both tortillas with salt and pepper.
Bake for 10-12 minutes.
Remove from the oven, allow to cool slightly, and enjoy!
