Easy Open-Faced Breakfast Toast

This breakfast is perfect for when you're in a time crunch and packs 23 grams of protein.


Ingredients:

  • 1 ciabatta roll, cut in half

  • 2 large eggs

  • 1 tbsp half & half

  • 1/2 tbsp olive oil

  • 2 slices bacon, cooked and diced (sub turkey bacon)

  • 1/2 medium avocado, sliced thinly

  • 1 tbsp green onion, diced

  • 2 tbsp chipotle mayo

  • Salt and pepper, to taste

Instructions:

  • Toast both halves of the ciabatta bread roll in a toaster or toaster oven.

  • Remove the ciabatta from the toaster and set aside.

  • In a bowl, whisk the eggs, half and half, salt, and pepper together. Heat olive oil in a skillet over medium heat. Pour the egg mixture into the skillet and cook until done (~3 minutes).

  • Remove the scrambled eggs from the skillet and place onto the slices of ciabatta.

  • Add the bacon, avocado, green onion, and chipotle mayo.

  • Serve with a cup of coffee!
