Jalapeno Cheddar Biscuits

Prep Time: 15 minutes | Cook Time: 15 minutes | Total Time: 30 minutes

Ingredients:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1 tsp garlic powder

  • 1/4 tsp cayenne pepper

  • 6 tbsp unsalted butter, cold and cubed

  • 1 and 1/2 cups cheddar cheese, shredded

  • 1 jalapeno, diced and seeded

  • 3/4 cup and 2 tbsp heavy cream*

  • 1/2 tbsp melted butter, for brushing (optional)

Instructions:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.

  • Combine the flour, baking powder, salt, garlic powder, and cayenne pepper in a bowl and set aside.

  • Then add the cold butter to the dry ingredients and cut in using a pastry blender.

  • Add the cheese, diced jalapeno, and half and half. Stir the mixture with a fork until a ball of dough forms.

  • Kneaded the dough minimally, about 10-12 times. (Fold, press, turn)

  • Use your hands (don’t use a rolling pin) to flatten the dough to 1" thick, and lightly dust a round biscuit cutter with flour.

  • Making close cuts, press the biscuit cutter down into the dough, and drop the biscuit onto your prepared baking sheet.

  • Once all the dough is used, bake the biscuits in the oven for 10-15 minutes or until lightly golden brown.

  • Remove from the oven. If desired, brush with melted salted butter immediately after removal. Serve warm and enjoy.

  • Swap out the heavy cream for buttermilk or half and half, if desired.

Your biscuit should double in height, have a flat, crisp, and golden-brown top, and horizontal cracks on the sides (indicating flakiness).
