Shortbread Cookies


Prep Time: 5 minutes | Cook Time: 20 minutes | Total Time: 25 minutes

Ingredients:

  • 1 cup unsalted butter, room temperature

  • 3/4 cup powdered sugar

  • 1/2 tsp vanilla extract

  • 2 cups all-purpose flour (option for gluten-free)

  • 1/4 tsp salt

Instructions:

  • Preheat oven to 325° F. Line two lightly colored baking sheets with parchment paper and set aside.

  • In the bowl of a stand mixer, add the butter, sugar, vanilla, and flour. Mix slowly until a crumbly dough forms.

  • Form the dough into a ball and roll it to about 1/3-1/2-inch thick. Cut using a cookie cutter of your choice and place onto the prepared baking sheets.

  • Bake until the bottoms of the cookies are barely golden brown. Allow to cool completely before storing.
