Mom’s Gluten-Free Waffle Recipe
These waffles have been a cherished staple in my home for as long as I can remember. Every Sunday, my mom would prep breakfast for the week so me and my brother could have something quick to grab on the way to school. These waffles were a favorite of mine and they never failed to start my day on the right note. Now, I’m thrilled to share this beloved recipe that’s been a delicious part of my mornings for years.
Prep Time: 12 minutes | Cook Time: 20 minutes | Total Time: 32 minutes
Ingredients:
1/2 cup + 2 tbsp unsalted butter, room temperature
2/3 cup granulated sugar
3 large eggs
1 tsp vanilla extract
2 cups gluten-free flour
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 cup milk
Instructions:
Preheat a waffle iron and set aside.
Cream the butter and sugar together in a stand mixer.
Add the eggs and vanilla extract and mix.
In a separate bowl, combine the flour, baking powder, cinnamon, and salt.
With the stand mixer at the lowest speed, alternate between adding the flour mixture and the milk.
Pour about a 1/2 cup of batter into your waffle iron and bake until done. Repeat with the remaining batter.
Serve with maple syrup or fruit!
