Orange Cardamom Muffins

Prep Time: 10 minutes | Cook Time: 25 minutes | Total Time: 35 minutes

Ingredients:

  • 3/4 cup granulated sugar

  • 2 large eggs

  • 1/3 cup olive oil

  • 1/2 cup almond milk

  • 1/4 cup orange juice

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp ground cardamom

  • 1 and 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • Zest from 1 large orange

  • 2 tbsp turbinado sugar, for topping

Instructions (yields 12 muffins):

  • Preheat oven to 350°F and line a muffin tin with liners.

  • Whisk together the sugar, eggs, olive oil, almond milk, orange juice, and vanilla in a bowl. Set aside.

  • In a separate bowl, whisk together the flour, cardamom, baking powder, baking soda, salt, and orange zest. Add the dry ingredients to the bowl with the wet ingredients and fold everything together until no dry bits of flour are left.

  • Pour the batter into the prepared muffin tins, and sprinkle with turbindao sugar.

  • Bake for 22-25 minutes until risen and golden brown around the edges. A toothpick inserted into the center of a muffin should come out clean.

  • Allow to cool before taking a bite!
