Cilantro Lime Chicken Taco Salad


Ingredients:

  • 1 head romaine lettuce, washed thoroughly

  • 1 can pinto beans, drained and rinsed

  • 2 (6 oz) chicken breasts, pan-fried with 1/2 large jalapeno (diced) and adobo seasoning, cubed

  • 1 cup sharp cheddar cheese, shredded

  • 1 cup green onions, diced

  • 1 cup red tomatoes, diced

  • 1/2 cup cilantro, diced

  • 1/4 cup red onions, finely diced

  • 1/3 cup cilantro lime crema

  • Juice from 1 lime

  • 2-3 cups corn chips

  • Salt and pepper, to taste

Instructions:

  • Combine all ingredients, except the corn chips, together in a large bowl and toss with the cilantro lime crema. Add the corn chips, mix, and serve!
