Cilantro Lime Chicken Taco Salad
Ingredients:
1 head romaine lettuce, washed thoroughly
1 can pinto beans, drained and rinsed
2 (6 oz) chicken breasts, pan-fried with 1/2 large jalapeno (diced) and adobo seasoning, cubed
1 cup sharp cheddar cheese, shredded
1 cup green onions, diced
1 cup red tomatoes, diced
1/2 cup cilantro, diced
1/4 cup red onions, finely diced
1/3 cup cilantro lime crema
Juice from 1 lime
2-3 cups corn chips
Salt and pepper, to taste
Instructions:
Combine all ingredients, except the corn chips, together in a large bowl and toss with the cilantro lime crema. Add the corn chips, mix, and serve!
