Zucchini Fritters

Zucchini fritters are a fantastic way to utilize those little guys that are about to spoil. Perfect as an appetizer, side, or even a light main dish, these fritters are so easy to make and can be paired with a variety of dips and sauces!


Prep Time: 20 minutes | Cook Time: 20 minutes | Total Time: 40 minutes

Ingredients:

  • 5 medium zucchini

  • 1 and 1/2 tsp salt, divided

  • 2 large eggs, lightly beaten

  • 1/2 cup green onions, chopped

  • 3/4 cup all-purpose flour (option for gluten-free)

  • 1 tsp baking powder

  • 1/2 tsp black pepper

  • Olive oil, for cooking

Instructions:

  • Wash the zucchini and trim off the ends. Grate on the large holes of a box grater and place the grated zucchini in a mixing bowl. Stir in 1 tsp salt and set aside for 10 minutes.

  • After 10 minutes, squeeze handfuls of zucchini or wring it out in a cheesecloth over the sink to remove extra water, then transfer to a mixing bowl.

  • Add the green onion and the eggs.

  • In a separate bowl, stir together the flour, baking powder, 1/2 tsp salt, and 1/2 tsp black pepper. Add the flour mixture into the bowl with the zucchini and stir until well combined.

  • Using a griddle or a non-stick skillet, heat olive oil over medium heat. Once the oil is hot, scoop the zucchini mixture onto the hot surface about 1/4 cup at a time. Flatten out the tops slightly and fry until golden brown on each side.

  • Serve warm with sour cream or condiment of choice.
