Cranberry Kale Salad

Ingredients:

  • For the salad:

    16 oz kale

    1/3 cup slivered almonds

    1/2 cup dried cranberries

    1/3 cup candied ginger, sliced thinly

  • For the dressing:

    1/2 cup olive oil

    1/2 cup orange juice

    3 tbsp vinegar (I used peach-infused vinegar)

    2 tbsp honey

    1 tsp orange zest

    1 tsp fresh ginger, grated

    Salt and pepper, to taste

Instructions:

  • Rinse, dry, and massage the kale. Place into a large bowl.

  • Throw slivered almonds, dried cranberries, and candied ginger into the bowl with the kale.

  • In a separate, smaller bowl, whisk all of the ingredients for the dressing until well combined and emulsified. Pour over the salad and toss.

  • Serve and enjoy!
