Blueberry Crumble Bars
Prep Time: 15 minutes | Cook Time: 35 minutes | Total Time: 50 minutes
Ingredients:
1 and 1/2 cups almond flour
1 and 1/2 cups rolled oats
1/4 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil, melted
1/4 cup maple syrup
1 tsp vanilla extract
2 and 1/2 cup blueberries
1/3 cup maple syrup
1 tbsp lemon juice
3 tbsp cornstarch
1 tsp vanilla extract
Instructions:
Preheat oven to 350°F. Line an 8x8 pan with parchment paper. Set aside.
Combine the flour, oats, baking soda, and salt, together in a bowl. Add in the coconut oil, maple syrup, and vanilla extract and stir until well combined.
Divide the mixture in half and press half into the bottom of the 8x8 pan to form the crust. Set aside.
Add fresh or frozen blueberries to a saucepan over medium heat. Use a fork to mash the blueberries. Stir in the maple syrup, lemon juice, cornstarch, and vanilla extract. Bring the mixture to a boil, then simmer on low heat for 5-7 minutes, or until it thickens.
Pour the blueberry mixture over the crust and spread into an even layer.
Then, using your fingers, top the blueberry layer with the remaining crumble mixture.
Bake for 30-35 minutes until the crumble is golden. Remove from the oven and allow to cool completely before cutting.
