Carrot Cake Overnight Oats


Prep Time: 2 minutes | Chill Time: 8 hours | Total Time: 8 hours 2 minutes

Ingredients:

  • 1 cup rolled oats

  • 1 cup milk of choice

  • 2 tsp maple syrup

  • 1 tsp vanilla extract

  • 1 tbsp chia seeds

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 cup carrots, grated

  • 1/4 cup walnuts, chopped, optional (sub raisins)

  • 1/2 cup Greek yogurt, for topping

Instructions (yields 2 servings):

  • Mix 1/2 cup rolled oats with 1/2 cup milk, 1 tsp maple syrup, 1/2 tsp vanilla extract, 1/2 tbsp chia seeds, 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 2 tbsp carrots, and 1 tbsp walnuts in a small bowl or cup. Repeat with the remaining half of the ingredients in a separate cup.

  • Place both cups in the fridge overnight.

  • In the morning, spoon 1/4 cup Greek yogurt over both cups and sprinkle 1 tbsp of chopped walnuts on top.
