Carrot Cake Overnight Oats

Ingredients:
1 cup rolled oats
1 cup milk of choice
2 tsp maple syrup
1 tsp vanilla extract
1 tbsp chia seeds
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 cup carrots, grated
1/4 cup walnuts, chopped, optional (sub raisins)
1/2 cup Greek yogurt, for topping
Instructions (yields 2 servings):
Mix 1/2 cup rolled oats with 1/2 cup milk, 1 tsp maple syrup, 1/2 tsp vanilla extract, 1/2 tbsp chia seeds, 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 2 tbsp carrots, and 1 tbsp walnuts in a small bowl or cup. Repeat with the remaining half of the ingredients in a separate cup.
Place both cups in the fridge overnight.
In the morning, spoon 1/4 cup Greek yogurt over both cups and sprinkle 1 tbsp of chopped walnuts on top.
