Indian-Spiced Potato Latkes


Prep Time: 15 minutes | Cook Time: 15 minutes | Total Time: 30 minutes

Ingredients:

  • 6 medium russet potatoes, grated

  • 1/3 cup red onion, diced

  • 1/4 cup green onion, thinly sliced

  • 1/4 cup cilantro, chopped

  • 2-3 tbsp jalapeno, finely diced

  • 2 large eggs, slightly beaten

  • 3 tbsp all-purpose flour (option for gluten-free)

  • 1 tsp garam masala

  • 1 tsp cumin seeds

  • Salt and pepper, to taste

  • Olive oil, for frying

Instructions (yields ~20 latkes):

  • Grate the potatoes and wring out excess moisture with a cheesecloth.

  • Place the potatoes in a large bowl with the other ingredients and mix.

  • Fry spoonfuls of the potato mixture in hot oil, pressing down to form patties.

  • Cook until golden brown on both sides, drain on paper towels, and serve.
