Indian-Spiced Potato Latkes
Prep Time: 15 minutes | Cook Time: 15 minutes | Total Time: 30 minutes
Ingredients:
6 medium russet potatoes, grated
1/3 cup red onion, diced
1/4 cup green onion, thinly sliced
1/4 cup cilantro, chopped
2-3 tbsp jalapeno, finely diced
2 large eggs, slightly beaten
3 tbsp all-purpose flour (option for gluten-free)
1 tsp garam masala
1 tsp cumin seeds
Salt and pepper, to taste
Olive oil, for frying
Instructions (yields ~20 latkes):
Grate the potatoes and wring out excess moisture with a cheesecloth.
Place the potatoes in a large bowl with the other ingredients and mix.
Fry spoonfuls of the potato mixture in hot oil, pressing down to form patties.
Cook until golden brown on both sides, drain on paper towels, and serve.
