Spinach Soufflé


Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time: 40 minutes

Ingredients:

  • 10oz spinach, fresh

  • 2 tbsp unsalted butter, melted

  • 3 large eggs, beaten

  • 1/2 cup sour cream

  • 1 cup gouda, grated

  • 1 tbsp green onion, thinly sliced

  • 1 tbsp flour

  • 1/4 tsp salt

  • 1/8 tsp nutmeg

  • Dash of black pepper

Instructions (yields 4 servings):

  • Cook spinach in boiling water for 3-5 minutes and drain well (make sure to get all the moisture out). Stir in the butter.

  • Combine the eggs, sour cream, gouda, green onions, and flour in a bowl. Stir in the spinach and butter mixture. Add salt, nutmeg, and black pepper, then mix.

  • Portion the mixture into 4 souffle dishes. Bake at 350°F for 20-30 minutes or until the center is set.

  • Remove from the oven and allow to cool slightly before serving.
