Puff Pastry Apple Tarts

I made these for my boyfriend’s family’s Thanksgiving and they were a hit! If you love apples but are looking for something a bit different from your classic apple pie, try this recipe. Especially with this busyness around Thanksgiving, this recipe is super simple and looks like you spent forever baking it!


Prep Time: 35 minutes | Cook Time: 20 minutes | Total Time: 55 minutes

Ingredients:

  • 2 sheets frozen puff pastry

  • 4 small apples (I used Granny Smith)

  • 3 tbsp unsalted butter, melted

  • 1/4 cup light brown sugar

  • 1/2 tsp cinnamon

  • 3/4 cup applesauce

  • 1 egg yolk

Instructions:

  • Remove the puff pastry sheets from the freezer and leave to thaw for 5 to 10 minutes, or until soft.

  • Preheat oven to 350°F. Line two baking trays with parchment paper.

  • Cut each puff pastry sheet into 4 equal squares, and fold about 1 cm of all 4 sides to create an edge. Gently press with your finger or a fork on each folded edge, and prick the bottom of the pastries using a fork.

  • Place the pastry squares on the baking sheet and bake for 10 to 15 minutes or until slightly puffed and lightly golden. Remove from the oven and set aside.

  • While the pastries are in the oven, prepare the rest of your ingredients. Peel, core, and thinly slice each apple. Set aside.

  • Mix the melted butter with the light brown sugar and cinnamon. Set aside.

  • Spread equal parts applesauce in the center of each pastry, then top it with the thinly sliced apples. Brush the butter, sugar, and cinnamon mixture over the slices.

  • Crack an egg, whisk only the egg yolk in a separate bowl, and brush it over the edges of the pastries for a golden finish using a silicone brush. Be careful not to brush on too much eg wash on the pastry as you risk a result of uneven shine and browning.

  • Bake for 15 to 20 minutes until the edges are puffed and golden and the apples are slightly soft.

  • Allow to cool before devouring!
